Update on Horseradish

A few weeks ago, I shared my husband’s spring tradition of preparing horseradish for a “spicy” condiment to serve with hamburgers, hot dogs, roasts, etc.   At that time, no leaves were showing on the plants.  The horseradish roots are only good to dig and grind before the leaves grow.  It loses strength as it leafs out.  They are mature now, lush and green.
